Thai green chicken (or Quorn)



You will need:

Either 3 chicken breasts cut into cubes, or one bag of Quorn chicken style pieces
2 medium-large courgettes, roughly grated
1 bunch of spring onions, chopped finely
1 green chilli, de seeded and finely chopped
2 tsp grated ginger
2 tsp grated garlic
2 tbsp veg oil
2 tsp turmeric
1 tin coconut milk
2 tbsp Thai fish sauce

Heat oil in a wide frying pan, and cook the chicken pieces gently until they begin to seal on each side.
Add the ginger and garlic with the spring onions and grated courgette, and the coconut milk.
Simmer for a couple of minutes.
Add the chopped chilli and the turmeric.
Add the fish sauce and simmer this gently while you cook some rice to go with it (10 mins or so).
Serve hot.

  1. This sounds good, although I only eat chicken if I'm visiting someone. Love the sound of the ginger and coconut milk. Is it you that's vegetarian, or is it vegan? Not commented recently as I was spending too much time on blogs and the house is a complete tip. Need a sort out!

    I suppose you need to be very organized with quite a few people to feed, there are only the two of us and I'm not a very efficient cook but try to use things up and make the most of what's in the fridge and freezer. I cook veggie things for me and not for husband, although he doesn't mind the odd veggie meal.
