A blissful day - and another recipe for you!
What a beautiful day it's been today!
-1tbsp Olive oil
Weather like the middle of summer: what a gift, so Man Wonderful and I decided to take each other for a picnic to one of the local National Trust beauties - Antony House.
It was used for filming for Tim Burton's Alice in Wonderland a few years ago, and there's still lots of evidence of this around the grounds.
We had a supermarket picnic 'meal deal' with a couple of extras between the two of us.
We sat and read in the shade of a huge tree in the peace and quiet.
I even took some time out to work on my patchwork.
This evening I made Lamb Koftas with hummus, griddled veg and flatbreads.-500g lamb mince
-1tbsp ground cumin
-1tbsp ground cinnamon
-2 cloves garlic, grated
Combine these and form into lozenge shapes on skewers.
I cooked these on my griddle pan over a high heat, retaining the fat that came off while cooking.
I then popped them in a warm oven while I griddled:
- Sliced courgettes, peppers, tomatoes and mushrooms
In the retained lamb fat.
These I also popped in the oven.
I'd made hummus earlier on using chickpeas, tahini, olive oil and fresh garlic.
Then I made some fast flatbreads using:
-I tsp salt
-1tbsp flour
-water to make a dough
I rolled out small balls of this dough in very thin pieces on a floured board and cooked them in a heavy based pan over a high heat for just a minute or two each side.
Our meal was served with a dollop of Greek yogurt splashed with lemon juice to finish.
That does look like a blissful day. We should all have days like that, although I think I would have gone for a larger bottle of wine. :-) X
