Parmesan Chicken - a recipe!

Its been yonks since I wrote you out a recipe that I've cooked, and as I can't make dinner for you tonight, I thought I'd share a really easy meal that looks and tastes impressive.



(GD is gluten-free, so I like to serve this with either polenta, rice or quinoa, or occasionally we'll have sweet potato chips.)


You will need:

About 6 tbsp grated Parmesan or another hard cheese
4 chicken breast fillets cut in half thickness-wise
2 beaten eggs


Heat some oil in a frying pan, and dip each breast fillet into beaten egg then into grated Parmesan before cooking in the oil.

Turn over after a couple of minutes and keep cooking this way until the chicken is cooked - about six minutes or so.

I served ours tonight with a tomato salad, stir-fried grated courgette and quinoa cooked with lemon zest and olive oil.

Very tasty!

I was veggy when I met Man Wonderful, then we were vegan for five years, but when I had the breakdown we desperately did everything we could to try and make me better; including reintroducing meat and dairy, in case I'd been missing out vital nutrients. We eat mostly veggy now, with meat once or twice a week, and lots of quorn.

    1. OK, no worries. We've been cutting back on the meat eating lately. It has become so expensive here. A meatloaf that we love went from $4.99 to $9.99 in less than 18 months.
