Thursday night supper
Following on from my previous post..
I don't usually cook on Thursday evening, but tonight I needed to pull myself up by my bootstraps as I was needed to be mum.
The balance between being shattered and needing to get a meal for folk was:
Sweet potato wedges with garlic and rosemary
Veggy bolognaise
I realise that in some households the takeaway menu would have been order of the day, but that's a true cop-out here, and expensive to boot.
The wedges were cut from the sweet potatoes - skin on - and popped into an ovenproof pan with some veg oil, dried rosemary and a frozen block of minced garlic.
This went on at 180c.
Then I chopped two onions and heated this in a splash of veg oil with another block of garlic, two tins of chopped tomatoes and a bag of frozen quorn mince.
This simmered for fifteen minutes.
A very easy supper for four hungry, knackered and fairly stressed adults: now we are de-stressed and soporific.
Bliss.
