Jack's burgers
A very easy lunch today - Jack Monroe's Carrot, Kidney Bean and Cumin burgers.
If you've never made these before, I can recommend them.
I made these with my kitchen assistant (2 year old Granddaughter!).
This is my version/method.
Drain and rinse two time of value kidney beans. Pop them into a saucepan and bring to the boil. Turn off the heat and leave to cool slightly before draining again.
Meanwhile, grate two carrots and one onion.
Add a little oil to a non-stick pan and sauté the grated veg with 2tsp ground cumin. Add the drained beans and stir to mix. Heat gently. Mash the mixture to a thick consistency. Roll into balls and place on a floured plate.
Heat oil in the pan once more.
Take each ball and roll in flour* before flattening slightly and then frying on each side for a few minutes until golden brown.
These are delicious.
Sometimes we eat these in bread rolls like traditional burgers, sometimes with salad and coleslaw.
Today I ate mine with just brown sauce!

ReplyDeleteI have made these a few times, they are on the meal plan for Monday. I will be stuffing them into homemade rolls with a handful of baby spinach and serving with more salad and Apple, Plum and Chilli relish. None of my guests are vegetarian but they all love these.
