Mediterranean Mince (V)

 Our veg box arrived today and there's lots of gorgeous veggies for the week, for the two of us.

We are on a really tight budget at the mo, but eating really healthy food is so important for us.

This week I had planned to make a chilli with kidney beans, and while that's a gorgeous meal, I decided to 'slightly alter' the recipe: and hence Mediterranean Mince (V) was born.

Here's the recipe:

Will feed two adults, or four with a jacket potato.

1 chopped onion

1 chopped red pepper

2 chopped courgettes

4 chopped fresh tomatoes 

6 chopped mushrooms

150g frozen Quorn mince

Herbs: Chives, Oregano, Sage, Thyme, Parsley and Rosemary

Olive oil


Heat a small amount of oil and lightly cook onion and courgettes.

Add the rest of the chopped vegetables and the mince. Stir.

Add tsp of each herb.

Done!
