Meal Planning

Planning meals seems to be a wee theme in blogland today, so I thought I'd add my two penny's worth to the cause!


We have had a weekly fruit and veg box delivery since Lockdown 1.  One week it is a seasonal box, the next week it is a large family box and they alternate. Tomorrow is veg box day so this evening we had a DF pizza from the freezer with the last of our salad veg and some sundried tomatoes Gorgeous Daughter had picked up from the wholesale bargain shop.

It's funny how we are left with different bit each week.

This week we had to buy more carrots from the corner shop, but have two leeks and seven oranges left over.  Last week we had a swede and 6 onions left over.

So.

Meals we 'plan' to have this week: the only day that is fixed is Sunday roast.


  • Veg and bean chilli

  • Roast with our 'bubble' on Sunday - I will probably make a lentil loaf. HM stuffing and yorkshires

  • Oven baked root veg with a fillet of fish from the freezer (we have some sea bass and lemon sole left)

  • Veg curry of some kind

  • Mushroom, spinach and goat's cheese lasagne 

  • Lentil stew

  • All day breakfast - baked beans, scrambled egg, veg sausages, sweet potato chips
  • .
  • Just in case dinner: HM veg pasties in the freezer
We always have a 'just-in-case' dinner that just need microwaving.  Last week I made extra veg pasties as I had some reduced price ready-roll pastry to use up.
They will be fine in the freezer for a month and are already cooked.  If we need to just heat and eat they are there as well as a small amount of leftover curry from last week that we could eat with jacket spuds.

  1. I always have a just in case or can't be bothered option in the freezer too. Great for days when we have to go over to town.
