Carrot cake recipe
I will state here and now that my cakes don't look like shop-bought ones, but they taste fab and are cheap and easy to make.
Today we have the family coming for tea. I'm making Toad-in-the-Hole with roasted spuds, steamed veg, stuffing balls and gravy; and a veg roast for the non-meaty people.
I've made carrot cake for dessert.
This is my no-fail recipe (N.B it doesn't fail for me..).
1 egg - beaten
Butter or marg - 100g
S.R.flour - 250g
Milk - 100ml
Baking powder - 2 tsp
Carrots - 3 large ones, grated
Ripe bananas - 2
Sugar - 200g
Cinnamon and mixed spice - 2 tsp each
I make this in two loaf tins, assembling when it is cool.
1. Blend together the fat, sugar, mashed banana, egg and milk.
2. Add flour, spices and baking powder. Whisk until no lumps or bumps.
3. Add the carrot.
4. Pop into lined dishes and bake for 45 mins or until a skewer comes out clean.
5. Cool on a cooling rack.
Make the creamy bit:
100g butter or marg
400g icing sugar, sifted
100g cream cheese
Mix together until blended. Chill. Add to middle and top/sides of cake once about to serve.
Enjoy!
Crushed, tinned pineapple and some walnuts are a great addition to carrot cake.

Hi, I use two loaf tins for this cake, then sandwich the cakes together once cool. X
