A change is as good as a rest...

 I looked at the online list of veg our veg box delivery were offering. I like to eat seasonally and was also getting a bit fed-up of our meal plan.

So the last couple of weeks we've been eating different recipes: each one has been really yummy. 

This is what we've tried so far: (veggie versions of the following)

Light meals: 

. Avocado and scrambled egg sandwich

. Mushroom rarebit

. Cajun salsa

Main meals: 

. Tagine

. Moussaka

. Root veg pie

. Buddha bowl

. Bouguinon minus beef


I cook enough for 4 and we eat each main meal twice - using my cooker every other day and reheating using the microwave every other day.

  2. Hello beautiful x I tried a recipe what I saw on Face book in the wee small hours when I couldn't sleep on one of those videos. Easily made veggie! On an oven tray, scatter sliced peppers, onions, mushrooms ( chicken for meaties ), some spring onions and whatever other veggies you like sliced into long strips. Season with fajjita spices, spray with some oil, mix through and roast for 30 minutes until soft and charred on the edges.
    Next, either in the same tray or in a roasting dish with deeper sides, use soft tortilla circle wraps as a pastry case if you will but over lap them over the edge. scatter over some grated cheese, then half the veggie mix, then (trust me it works ) a layer of doritoes type snacks - can be spicy or mild to suit taste, slightly crush them in your hands. then repeat with cheese, veggies, crisps and finally a layer of cheese and then close the soft wraps over the top until all is covered. Tuck it in! cover with a layer of greaseproof paper and weigh another oven dish on top and bake like this for 30 - 40 minutes.
    Gorgeous with salad, rice chips owt! Also lush cold the next day. Like a pasty really.
    It sounds more complicated typing it out than making it. But for a change- it was lovely, filling, made loads ( Miss 28 and her Beau were here too ). I suppose you could half make it it oven were on for half the time or you had a spare tray I suppose.
